Let us go back and revisit an old favorite.

One of my (and my friends’) go-to restaurants in Manila would have to be CYMA. I remember the hype that a mere mention of the place would generate when it first opened in Greenbelt 2, Makati. When asked, “What’s good?” the answer would most often be, “EVERYTHING!” Since then, Cyma has opened branches in Shangrila Mall in Ortigas Center and Eastwood Mall in Libis. I have tried all 3 branches and the good thing about the chain is that the quality has remained consistent over the years – uniquely flavorful dishes that are generous in portions and clearly whipped up with the freshest ingredients (tender meats and no fishy smells!).

So after debating over the food fare in Shangrila last Saturday, my friends and I decided to revisit CYMA. It was not surprising that at 7pm, we were already 5th on the waiting list. The restaurant still enjoys a loyal following, with consistent reservations and a waiting line. We were finally seated a little before 8pm on an outside table.

We were not very hungry. We decided to keep our order simple:

We love how they didn’t skimp on the lamb chunks! Each ingredient (the watermelon, lamb, feta cheese, olives, lettuce) was equally portioned and tossed with the light balsamic dressing. This is one of the dishes that we love in this restuarant.

Clam Pasta
I forgot how they call it in on the menu but suffice to say that Cyma makes one of the best clam pastas in town. You can instantly tell that the clams are fresh – no stink and grainy texture. The use of angelhair is perfect so that the noodles don’t overpower the flavor of the sauce. I like how the entire dish has an herby flavor through and through.

Stifado (Greek Beef Stew)
The Stifado was a dish that we have never tried so it was something new for all of us. It came to us in large beef chunks, coated in a rich tomato-based sauce, with roasted onions on the side. Right away, you can tell that it was herby. The meat, as with their other meat dishes, was tender, easily pliable from the bone. The sauce is rich and tangy but not too overpowering. It could do with a little less amount, though. Best with rice , but equally as good with the potatoes.

So if you can’t remember the last time you’ve been to CYMA, troop on over and give it another try. For the taste and portions, it’s still definitely worth the value!
