During our anniversary, we ate at Escolta at The Peninsula Manila. As always, the food was delicious. What was memorable and what I wanted to share with you was this unique way of serving brownies. They had this dessert prepared at the desserts bar.

It was a small slice of brownie placed on top of a small dish lined with rasberry jam. It was then decorated with 2 raspberries on the side. I think it was genius for the pastry chef to think of this. It was brilliant and delicious.

I can’t wait to try doing this at home. Just a tip though. Choose or bake brownies that are not too sweet so that the overall composition with the jam will be just right.
