Every Monday evenings, my grandmother invites family to come to her house to have dancing lessons. My mom is one of the willing participants. My cousins and I, usually go, but only witness everything as spectators. Yesterday, we decided to participate (well, ‘we’ was actually just my cousin, Maika). My cousin decided to share her cooking skills and recipes. She cooked Chicken Ciabatta and Puttanesca. I wanted to learn (since this is one of my goals for the year!), so I documented everything and surprisingly, it was really pretty easy to make.
I’ll be posting the recipe for Chicken Ciabatta today and the recipe for the Puttanesca this week. I hope that you all enjoy this! :)
Chicken Ciabatta Recipe
Ingredients:
Chicken breast
Ciabatta bread
Spring Onions
Garlic
Vegetable Oil
Olive Oil
Basil
Mayonnaise
Tomatoes
Onions
Eggplant
Lettuce
Tomato Sauce
Mozarella Cheese
Salt
Pepper
Step 1: Defrost the Chicken breast that you will use. We used one thick slice of chicken breast per sandwich! Yum!
Step 2: Prepare the marinade for the Chicken. My cousin calls this the Herb Oil Marinade. Prepare 2 cups of vegetable oil, 2 cloves of chopped garlic and a bowl of chopped spring onions.
Step 3: Blend these three ingredients together and add salt and pepper.
Step 4: Use the marinade for the chicken. Just use a brush and try to cover the chicken substantially.
Step 5: Leave the chicken first and then prepare the ingredients for the Pesto Mayo sauce, by blending 1 cup of olive oil with basil leave and mayonnaise. Add salt and pepper.
Step 6: Prepare the vegetables: Onions, Eggplant and Tomatoes.
Step 7: Saute the vegetables and add salt and Pepper to each type of vegetable. For the tomatoes, remember to saute it quickly and for the eggplant, remember to add oil together with the salt and pepper.

Saute the Tomatoes: Quicker than sauteing onions of the eggplants. Add salt and pepper during the saute process.
Step 8: Fry the chicken in oil, just so until it is a little bit brown.
Step 9: Place the chicken on a baking pan and top it with the sauteed vegetables, mozzarella cheese and a little bit of tomato sauce. Bake for 5-10 minutes in medium heat.
Step 10: Slice the Ciabatta bread and heat it in a griller until the bread is a little bit toasted.
Step 11: Assemble the sandwich by spreading the pesto mayo sauce. Place the chicken and vegetables topped with cheese on top, then add lettuce.
Viola! You have your sandwich.
